Blackberry Experiments (Cheesecake, Hand Pies, and a Galette)

We sure have had a great time with the blackberries.  They are nearing the end of their season now but we still go back occasionally to enjoy the beautiful stream and eat handfuls of deliciousness.  Here are a few of our experiments.

Blackberry Vanilla Cheesecake (vegan, gluten-free, raw) - inspired from Roost and My New Roots.


Don't let the pictures fool you, there was actually just as much blackberry filling as there was vanilla.  But I forgot to let the vanilla layer firm up before pouring the blackberry layer.  So the middle was mostly blackberry and very little vanilla.

  1. Oh my! These all look delightful! I experimented some with the raw vegan cheesecake. I haven't played with it recently, but I think I would tweak it a little to taste. All of your pictures look so delicious. Glad that you have a bit of free time to do some baking. :)

  2. Hi Emily! Those two sources for the raw vegan cheesecake were really good and I was impressed with the taste. Because it was based on cashews instead of tofu, it had a different taste than other vegan cheesecakes I had previously tried. Try it out and tell me what you think! I want to make another one soon!! Oh, and a Vitamix helps to get it really smooth ;)

  4. :) It WAS good! But the plum one I made this weekend for Sabbath was even better! They're super easy to make - you could make one for potluck easy! Just use a pie dough recipe, then spread about a TBSP of corn starch, sprinkle some sugar, and then put jam/thickened fruit and sliced fresh fruit on top.
